- Buttercup Squash
- Balsamic Vinegar
- Pure Maple Syrup
- Pasta
Cube the squash and saute it. While the squash is cooking, boil the water for the pasta. Make sure to stir the squash often to keep it from burning. You can use water, or olive oil in the pan. Cook the pasta according to the directions once the water is boiling. Once the squash is fork tender, deglaze the pan with the balsalmic vinegar and stir to evenly coat the squash, then add the maple syrup. Drain the pasta and then return it to the pot, pouring the squash mixture over the pasta. Stir thoroughly to coat everything, then serve and enjoy.
