We have an announcement

Just a quick note because we wanted to tell you some exciting news…

We are adding a playground/picnic area & animal barn at the farm!

We are super excited about this addition. Our goal is for you to be able to pick up your groceries and enjoy some fun at the farm!

Stay tuned for updates as the project goes on. Plus, we will be posting on social media when we need your help naming the animals.

PS – Check out this YouTube video we made last week! It’s a tour of the greenhouse.  It will definitely get you excited for spring! 🙂

Hope you are doing well!

I wanted to share a few pictures from around the farm with you this week.  The warm weather sure makes it feel like spring.  I am hoping these pictures will help you to believe that spring is just around the corner. 🙂


The sunshine and longer days are making the greens grow!  We have lettuce, salad mix, spinach, arugula, kale & swiss chard available. Pictured here is some beautiful spinach!

    
The tomatoes are looking great!  We ate the first cherry tomato last week.  It will be a few weeks yet before we will be picking any quantity. We will let you know once they will be at the market!

    
We have started planting crops for the field. Here are the first onions & celery.  We will be harvesting these in June.


We planted in the field last week.  The weather has been so nice we could not resist.  The radishes that Mitch planted have already sprouted!


Here is a picture from market last Saturday. I wanted to remind you that the markets are open.  We have all kinds of fresh produce ready for you!

  • Muskegon Farmers Market:  Saturday, 8am – 1pm.
  • Kalamazoo Winter Market:  Saturday, 8am – 1pm.
  • Market at the Farm:  Monday – Friday, 8am – 6pm & Saturday, 8am – 5pm.


Blossoms are starting to show on the peppers in the greenhouse.

Crunchy Lettuce Salad

Ingredients:

  • 8 cups lettuce and spinach
  • 6 slices bacon (fried and crumbled).
  • 1/3 cup chow mien noodles
  • ¼ cup almonds
  • 2 tsp. sesame seeds
  • 2/3 cup oil
  • 1/3 cup sugar
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 Tbls. white vinegar

Directions:

  1. Toss lettuce and bacon in bowl.
  2. Bake chow mien noodles, almonds and sesame seeds in the oven at 350 degrees for 7 minutes.
  3. In a jar with lid combine and shake: oil, pepper, sugar, vinegar and salt.
  4. Just before serving toss all together and add dressing.

It is a celery root!

Celery root is a great seasonal substitute for celery. Use it is soups, roasted or even eat it raw. Simply peel, chop & enjoy. The best part? No celery strings!☺️

What are microgreens and why you should eat them.

How are you doing? I hope everything is going well!

These drab winter days have me craving fresh greens.   I wanted to highlight one of my favorite greens we have growing right now for you – Microgreens.

Do you know what microgreens are?  Microgreens are like baby plants that you can eat. They are very small and come in different colors and shapes. These mini greens pack in a full punch when it comes to flavor and nutrition.

Microgreens are also super healthy. They have up to 40 times more vitamins, minerals, antioxidants, and other good stuff than their grown-up versions. These nutrients can help you stay healthy, prevent diseases, boost your energy, and improve your brain function.

Microgreens taste just like the flavor of the matured crop.  Beet micros taste like a beet.  The broccoli that is included in our mild mix, tastes like broccoli and so on.   We grow several varieties. (Our confetti mix is my favorite, it’s like a party on your plate!)

Treat microgreens just like your lettuce.  Wash and dry with a salad spinner.  Store in your fridge.

Enjoy them as a garnish or as a tasty addition to sandwiches.  Or just eat them raw, right out of the bag. 🙂

A bit of spring for this winter day!

Just wanted to share a bit of spring on this snowy winter day!


We are seeing the first cherry tomato blossoms on the greenhouse tomatoes!


The greenhouses are also full of all kinds of greens.

Easy Peanut Butter Cookies

Ingredients:

  • 2 cups peanut butter (we use Koeze smooth peanut butter)
  • 2 cups brown sugar
  • 2 eggs

Directions:

  • Preheat oven to 350 degrees.
  • Line the baking sheets with parchment to prevent sticking and burning.
  • Mix all ingredients in a mixing bowl with a rubber spatula until well mixed and firm.
  • Use a spoon to portion dough and roll dough into a ball.
  • Place the dough ball onto the tray and press down with a fork.  You can choose how thick or thin you want the cookies to be here.
  • Once you have finished placing the cookies on the sheets and put them in the oven for about 15 minutes or until the edges start to crisp. If you are using more than one baking sheet make sure to swap the sheets on the racks in the over in 10 minutes to prevent burning.
  • Remove cookies form the oven and let them sit on the sheet for at least 15 minutes to harden.  They will fall apart if you attempt to remove them before then.

Free Veggie Day is happening THIS week!

Just a reminder about our free veggie day happening THIS Friday!

Here are all the details:

  • Address:  5888 120th Ave, Holland, MI 49424.
  • Date:  January 5, 2024.
  • Time: 10am – 6pm.
  • We will be giving away squash & potatoes.
  • If you are able, we will be accepting donations for the Holland Gateway Mission.

Bring a bag and a friend!

Why are we giving the veggies away for free?

We saw a video from a farmer in Canada working to fight food waste and be a blessing to the community.  He was giving his “ugly” second potatoes away for free.

We have often talked about this… how can we convince people that food’s value is not determined by its appearance. It is equally nutritious and delicious regardless of its size or shape.

So, we are doing a free veggie day!

Our goal is to be a blessing to the community and show people how delicious local food is, even if it’s not perfect.

Let’s get the year off to a great start!
