• 2 pounds potatoes, peeled and cut
  • 1/2 cup butter, melted
  • 1/4 cup minced parsley
  • salt and pepper to taste


  1. In a saucepan, cook potatoes in water to cover until tender; drain.
  2. Combine butter and parsley; pour over the potatoes and toss to coat.
  3. Season with salt and pepper.
