Ingredients:

  • 1 T olive oil
  • 1 c onion (or chopped leeks)
  • 1 T flour
  • ½ t salt
  • ¼ t pepper
  • 1 c skim milk
  • ½ c feta cheese
  • 2 egg whites
  • 1 whole egg
  •  1 pkg frozen spinach, thawed, squeezed dry (or 2 c chopped fresh spinach, chard or kale)
  • 2 c left over- cooked rice
  • 2 T Parmesan cheese

Directions:

Sauté the oil and onions.  Add the flour, salt, and pepper.  Gradually add the milk while stirring until thick.  Stir in all the rest at once BUT the Parmesan cheese and pour into a greased 9” pie plate.  Sprinkle the Parmesan on top then bake. Bake 400 35-40 min.
