Ingredients:

  • 2 c. flour
  • ½ c. brown sugar, packed
  • 3 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • 2 eggs
  • ¾ c. milk
  • 1/3 c. vegetable oil
  • 1 c. grated zucchini
  • 2/3 c. raisins

Directions:

Combine dry ingredients.  Bake eggs, milk and oil.  Fold in zucchini and raisins.  Add dry ingredients, stirring only until combined.  Spoon into muffin tins.  Bake at 375 degrees for approximately 20 minutes.  Makes 12 minutes.  Variation:  Use 2 cups whole wheat flour.
