If you haven’t tried spaghetti squash yet, you’re in for a treat. This vegetable literally transforms into pasta-like strands when you cook it—and it’s surprisingly simple to make.

Easy Roasted Spaghetti Squash
Ingredients:
  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste
Instructions:
  1. Preheat your oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside with olive oil and sprinkle with salt and pepper.
  4. Place cut-side down on a baking sheet and roast for 35-40 minutes, until tender.
  5. Let it cool for a few minutes, then use a fork to scrape out the strands.
Serve it with your favorite pasta sauce, pesto, or simply with butter and parmesan. It’s a fantastic low-carb alternative to pasta, but honestly, it’s delicious in its own right.
