Spring is officially here!  It’s time to enjoy some fresh spring greens.

Here are a few recipe ideas for you:

Crunchy Salad

Ingredients:

  • 8 cups lettuce, spinach or microgreens
  • 6 slices bacon (fried and crumbled).
  • 1/3 cup chow mien noodles
  • ¼ cup almonds
  • 2 tsp. sesame seeds
  • 2/3 cup oil
  • 1/3 cup sugar
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 Tbls. White Vinegar

Directions:

  1.  Toss lettuce and bacon in bowl.
  2. Bake chow mien noodles, almonds and sesame seeds in the oven at 350 degrees for 7 minutes.
  3. In a jar with lid combine and shake: oil, pepper, sugar, vinegar and salt.
  4. Just before serving toss all together and add dressing.

 

Spinach Dip

  • 1 c. chopped, cooked spinach
  • 1 c. mayonnaise or salad dressing
  • 1/2 c. sour cream
  • 1/2 c. finely chopped onion
  • 1 1/2 tsp. parsley flakes
  • 1/2 tsp. garlic salt or seasoned salt

Directions: Combine and chill.  Serve with vegetables or crackers.
