• 2 medium zucchini, sliced
  • 2 tomatoes, peeled and chopped
  • 2 onions, sliced
  • ½-1 tsp. salt
  • Pepper
  • Butter
  • 1 cup.  Dry bread crumbs


Layer zucchini, tomatoes and onions in a buttered casserole.  Sprinkle each zucchini layer with salt and pepper and dot with butter.  Sprinkle crumbs on top.  Bake, uncover, until vegetables are done, about 25 minutes.  Variation:  Layer 2 c. shredded mozzarella cheese with other ingredients.
