Ingredients:

 

Cake Recipe

  • 2 cups sugar
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 3/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3 cups shredded zucchini

Chocolate Frosting Recipe

  • 1 1/2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla

Instructions:

Cake

  1. Preheat the oven to 350 degrees and grease a 9×13″ pan.
  2. In a large bowl, whisk together sugar, buttermilk, eggs, and vanilla until smooth.
  3. Add flour, cocoa powder, baking soda, salt, and baking powder and stir until combined.
  4. Stir in zucchini, just until combined.
  5. Spread into pan and bake for 35 minutes, until fork comes out clean. Set aside to cool to room temperature.

Chocolate Frosting

  1. In a medium bowl, combine cream, sugar, cocoa, and vanilla.
  2. Beat with an electric mixer on low until mixed then beat on high until stiff peaks form.
  3. Spread over cooled cake and serve.
