• 2 T. butter
  • 1 ½ c. diced onion
  • 6 c. finely chopped cauliflower
  • 4 c. chicken broth
  • ½ c. whipping cream
  • 1 c. milk
  • 1 tsp. salt
  • Pepper to taste


Melt butter in a large kettle and sauté onions for 3-5 minutes.  Add cauliflower and broth.  Simmer approximately 20minutes.  Add cream, milk, salt and pepper. Heat through.  Variation:  Puree cauliflower in the blender for cream of cauliflower soup.
