• ¼ c. cooking oil
  • 1/3 c. vinegar
  • 2 T. sugar
  • ½ tsp. salt
  • dash of pepper
  • 1 cucumber, thinly sliced
  • 1 small onion, thinly sliced
  • Lettuce


In bowl, combine all ingredients except lettuce.  Cucumber can be scored with a fork before slicing.  Cover and chill 1-2 hours.  (Cucumbers may be refrigerated in vinegar dressing for several days.) Drain, reserve dressing.  Serve on lettuce leaves or toss with lettuce pieces, using oil and vinegar mixture as dressing.
