1 c. brown rice
2 1/2 c. water or chicken broth
1 tsp. butter
1 T. soy sauce
1 T. vegetable oil
1 c. finely chopped bell pepper
1/2 c. finely chopped green onion
Simmer rice, water, butter and soy sauce approximately 35 to 40 minutes or until rice is tender and liquid is absorbed. Saute peppers and onion in oil until tender. Toss with rice and heat through. Season to taste. Variation: Use 1 c. long grain white rice and simmer 20 to 30 minutes.
