Ingredients:

  • 2 small zucchini
  • 2 small yellow squash
  • 3 T. butter
  • 1 small onion, chopped
  • 1 green pepper (optional)
  • ½ tsp. salt or to taste
  • 1/8 tsp. pepper

Instructions:

Cube, slice or cut squash into strips.  (Sprinkle with salt and let drain 30 minutes if desired.) Heat the butter in a large skillet and add the squash and onion.  Sauté, stirring frequently, about 5 minutes. Sliced squash will take less time.  Large cubes may take longer.  Season to taste.
