Fresh Salsa 1

  • 2 ripe tomatoes, diced
  • 2 green bell peppers, diced
  • 1 white onion, diced
  • 1/2 bunch fresh cilantro, for garnish
  • 1 tablespoon fresh lemon juice
  • 1 jalapeno pepper, diced

Directions

  1. In a medium bowl, mix tomatoes, green bell peppers, white onion, cilantro, lemon juice and jalapeno pepper. Cover and chill in the refrigerator until serving.

 

Fresh Salsa 2

Ingredients

  • 4 cups chopped peeled fresh tomatoes
  • 1/4 cup finely chopped onion
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon salt
  • 1 garlic clove, minced

Directions

  1. In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

Fresh Salsa 3

Ingredients:

  • 8 small tomatoes
  • 1 onion
  • 1 pepper
  • 1 hot pepper
  • 1 t. salt
  • ½ t. pepper
  • 1 t. garlic salt
  • 1 T. brown sugar

Directions:
Chop tomatoes and drain.  Add other ingredients and mix together.  Refrigerate overnight and drain again.
