Ingredients:
- 4 eggs
- 2 cup sugar
- 1 1/4 c. vegetable oil
- 1 tsp vanilla
- 3. cup raw grated carrots
- 3/4 c. nuts chopped fine
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. soda
Directions:
Combine eggs, sugar, vegetable oil and vanilla. Mix in carrots and nuts. Add dry ingredients. Put into 2, 9 inch cake pans. Bake at 350 degrees for 45 to 60 minutes. Frost with cream cheese frosting.
Cream Cheese Frosting:
- 8 oz cream cheese
- ½ c. butter, softened
- 4 c. powdered sugar
- 1 tsp. vanilla
- 1 c. chopped walnuts (optional)
Beat cream cheese, butter and sugar until creamy. Add vanilla and nuts.
