• 1 tsp. cinnamon
  • ½ tsp. ginger
  • ¼ tsp. cloves
  • ¼ tsp nutmeg
  • 2 c. mashed butternut squash
  • ½ c. sugar
  • 4 eggs
  • 1 can evaporated milk
  • 1 yellow cake mix
  • ½ c. butter, melted

Directions:

Mix together the first 8 ingredients; pour into a 9 by 13 cake pan.  Sprinkle dry cake mix onto squash mixture.  Drizzle butter on top.  Bake 350 degrees for 30 to 40 minutes.  Top with whipped cream or serve with ice cream.   From the Practical Produce Cookbook
