Directions
- In a medium bowl, mix tomatoes, green bell peppers, white onion, cilantro, lemon juice and jalapeno pepper. Cover and chill in the refrigerator until serving.

- 4 cups chopped peeled fresh tomatoes
- 1/4 cup finely chopped onion
- 1 jalapeno pepper, seeded and finely chopped
- 1 tablespoon olive or vegetable oil
- 1 tablespoon vinegar
- 1 teaspoon ground cumin (optional)
- 1 teaspoon salt
- 1 garlic clove, minced
Directions
- In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

- 8 small tomatoes
- 1 onion
- 1 pepper
- 1 hot pepper
- 1 t. salt
- ½ t. pepper
- 1 t. garlic salt
- 1 T. brown sugar
Directions:
Chop tomatoes and drain. Add other ingredients and mix together. Refrigerate overnight and drain again.
