Ingredients:
- 4 eggs
- 1 1/4 c. sugar
- 1 1/4 c. vegetable oil
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3 c. peeled, graded parsnips
- 1 c. chopped nuts (optional)
Directions:
Beat together eggs, sugar and oil. Mix in dry ingredients. Fold in parsnips and nuts. Pour into a 9×13 cake pan. Bake at 350 degrees for 50-60 minutes.
Cream Cheese Frosting:
- 8 oz cream cheese
- ½ c. butter, softened
- 4 c. powdered sugar
- 1 tsp. vanilla
- 1 c. chopped walnuts (optional)
Beat cream cheese, butter and sugar until creamy. Add vanilla and nuts. Spread between layers and on top
