Ingredients:
- 4 slices of bacon
- 1 small onion, chopped
- 3 c. diced parsnips
- 2 c. diced potatoes
- 1 tsp. salt
- 1 c. milk
- 1 c. cream
- pepper
- 2 T. butter
Directions:
Brown Bacon. Remove from kettle and cook onion in the drippings about 5 minutes. Add parsnips, potatoes, salt and just enough water to cover. Bring to a boil and then reduce heat and simmer 15 – 20 minutes or until vegetables are tender. Add milk, cream and pepper and heat through. Stir in Butter. Garnish with bacon.
