Ingredients:

  • 2 c. raw potatoes, sliced
  • 1 onion, sliced
  • 2 c. raw carrots, sliced
  • ½ c. rice, uncooked
  • ½ green pepper, chopped
  • 1 ½ lb ground beef
  • 1 can cream of mushroom or tomato soup
  • Salt and pepper

Directions:

Place ingredients in a buttered casserole starting with the potatoes on the bottom and ending with the soup of top.  Sprinkle potatoes, carrots, and ground beef with salt and pepper.  Bake at 375 degrees for 1 ½ hour.
