Ingredients:

  • 4 large baking potatoes
  • 8 strips of bacon
  • ½ c. chopped onion
  • ¼ c. grated parmesan cheese
  • 1 c. sour cream
  • 1 tsp. salt or to taste
  • ½ tsp. pepper
  • ¼ c. melted butter

Directions: Prick washed potatoes with a fork and bake at 400 degrees for 1 hour.  While potatoes cool for easier handling, fry bacon until crisp.  Remove bacon and leave 2-3 T. drippings.  Sauté onion 5 minutes.  Cut potatoes in half lengthwise; scoop out pulp.  Add to onions.  Add cheese, sour cream, salt, pepper and crumbled bacon.  Mix thoroughly.  Heat through.  Spoon into potato shells; drizzle with melted butter.  Sprinkle with paprika if desired.  Bake at 350 degrees for 15-20 minutes. Can be made ahead and heated just before serving.
