Ingredients:

  • 3 c shredded zucchini (2 to 3 medium)
  • 1 2/3 c sugar
  • 2/3 oil
  • 2 t vanilla
  • 4 eggs
  • 3 c whole wheat flour
  • 2 t baking soda
  •  1 t salt
  •  1 t cinnamon
  • ½ t cloves
  • ½ t baking powder
  •  ½ c chopped nuts
  • ½ c raisins (optional, omit if using blueberries)
  • ¼ c flax seed meal (optional)
  • fresh, frozen or dried blueberries (optional but extra yummy)

Directions:
Spray 1-9×5 inch, 2-8×4 or 3 smaller pans with cooking spray.  Stir together zucchini, sugar, oil, vanilla and eggs.  Stir in remaining dry ingredients.  Stir in nuts and blueberries or raisins.  At 350 bake 9 inch loaf for 70-80 minutes, smaller loaves for 50-60 minutes, or till toothpick comes out clean.  Cool in pans 10 minutes.  Cool completely before slicing.
